Asian Chicken Salad

This is always a hit at parties as an appetizer. Or I could just sit and eat it anytime!

2 (13-oz) cans chicken breast, drained
3 scallions, sliced
2 tbsp mayonnaise
2 tsp soy sauce
1 1/2 tsp sesame oil

1. Mix mayonnaise, soy sauce, and sesame oil to make dressing.

2. Combine remaining ingredients and add dressing. (If it seems a little thick, add a bit more mayonnaise.)

Serve on crackers.

Okay, this sounded so good that I literally went and made it right after I read it (at midnight). I was going to snack on cookies, but thought this sounded a little healthier :-). It was yummy and hit the spot! I did have to add more mayo like you recommended.
